This vegan omelette muffin (Green Evi) is astounding, and quite viral online. It’s made with silken tof and chickpea flour, with nutritional yeast giving the cheesy flavour. It contains veggies of your choice (this one has spring onions, mushrooms and cherry tomatoes) and there is also some garlic, pepper and salt (black salt gives an eggy taste).
A pinch of turmeric gives the yellow colour. This is often used for vegan recipes to make vegan scramble and omelettes yellow. You can even use it to dye clothes. Only use a tiny pinch to not affect taste.
