Gaz Oakley’s Stuffed ‘No Turkey’ (Avant Garde Vegan) is a complicated recipe, but designed to show just what can be done with plants. The roast is made with plant milk and dried mushrooms, chickpeas and firm tofu, flavoured with herbs, miso and maple syrup, then mixed with seitan, chickpea flour and cheesy-tasting nutritional yeast. Served with a herb rub and sage/apple stuffing, it’s cooked with a white wine herby broth, and served with a homemade vegan bacon wrap. Not real meat, so keep away from pets.
