Pumpkin Maple Granola (Plantiful Bakery) is a nice recipe using two traditional Canadian ingredients. This hearty breakfast or snack is naturally sweet but also contains heart-healthy oats and protein-rich pecans and pumpkin seeds. It has sea salt to balance the sweetness and uses pumpkin puree for ease of use. Bind with coconut or any other oil.
Granola is made for a few weeks, then stored in an airtight container. It’s not good for people with cavities, as it tends to get stuck or pull out your fillings! But for everyone else, it makes a nice travel snack. Maple syrup should be vegan (choose organic to ensure no filtering through bone char). And tapping the trees does not require them to be cut down. Pumpkin is naturally sweet, if you can’t find pumpkin puree you can cook and puree it yourself, but it’s easier to buy canned, and sold in most shops.
