Madeleines are French snack cakes, with a long and interesting history. Shaped like a scallop, the tea cake was supposedly created by a young girl servant, to serve to the king of Poland, who had fled to France. Another legend is that they were shaped as a scallop to serve to pilgrims, visiting the burial site of Saint Jacques.
Vegan Parisian Madeleines are a plant-based version of one of Paris’s top dessert treats. They are small lemon sponge cakes, that are often served with a cup of tea. This vegan version uses aquafaba (a vegan meringue made from whizzed up chickpea brine water) to make them light and fluffy. For this recipe, use a vegan butter with no palm oil.
Vegan Gluten-Free Madeleines (Full of Plants) are dense and buttery, infused with vanilla and lime, and a crisp chocolate shell.
Vegan French Madeleines (Nm Meiyee Plant Based) are light and airy. They are golden brown with crispy edges, yet soft in the centre.
