This rich vegan chocolate cake (The Happy Pear) is unique in that it contains no flour. Instead, it’s made with soaked cashew nuts alongside a chocolate coconut ganache filling, then set in the fridge. The cake is then giving a chocolate tipping. Adding coconut oil means the cake won’t ‘snap’ when you slice it!
