Vegan Chia Semla (Natalia Yonan) is a recipe by a classically trained raw chef. Semla is the national dessert, a yeasted cardamom bun that’s filled with cream. This pudding version uses chia seeds, just ensure you soak them beforehand to avoid them getting stuck in your throat, and avoid for children and people with swallowing difficulties (Parkinson’s etc).
This almond pudding is sweetened with maple syrup, and topped with a cashew cream made with soaked cashews and oat milk. Then sweetened with vanilla and agave.
