Nistisima: Vegan Cooking from the Mediterranean offers 100 naturally vegan recipes from the Mediterranean, Middle East and Eastern Europe. ‘Nistisima’ means fasting food – food eaten during Lent and other times of fasting, observed by those of Orthodox faith. Georgina Hayden is a cook, food writer and stylish from North London. Growing up above her grandparents’ Greek Cypriot taverna, she developed a love of cooking and storytelling, through recipes passed down to her. After working as a food assistant, she worked for Jamie Oliver’s food team for 12 years.
