Vegan Raspberry Ice Cream (A Brit in Helsinki) is a nice change from strawberry. This recipe is by a UK native who lives in Finland, where apparently they eat more ice cream than anyone else in Europe. This is made airy using ‘vegan meringue’ made from chickpea brine water, and there’s a little booze in here to stop ice crystals, although of course leave this out for children.
This recipe uses soaked cashews (one of the best ingredients for luxury vegan ice-cream), lime, banana and defrosted frozen berries. Moo Free make a good brand of vegan chocolate chips (no palm oil) although others are avaialble.
