Teriyaki is a Japanese cooking technique that grills or boils food with a glaze of soy sauce, mirin (rice wine) and sugar. Also popular in the fast food culture of Seattle in the US, the word comes from the Japanese word ‘teri’ which is the shine given to food, and yaki (to grill or broil). Invented by Japanese chefs a few hundred years ago, here are some nice plant-based recipes to enjoy.
